How To Make: Libido Lift Desire-Boosting Cookies
We’re reclaiming the word Jezebel for ourselves… Our all-time favourite star baker, and HANX lover, Angel's Sinfully Delicious Cookie Co (P.S. check her out!) was inspired to bake us our very own Jezebel cookies, made with a super special ingredient, our fruity desire-boosting supplement, Libido Lift. Think peach cobbler, with a cheeky little secret in the centre...
After she sent the very first batch to HANX HQ, and we all went absolutely wild for them, she was nice enough to share the recipe so you can enjoy these treats at home, too. In Angel’s words, "they’re so good, they’re sinful!"
** This recipe makes approx. 13 cookies.
*** For a quicker/simpler recipe alternative, you can simply skip making the curd filling and mix the HANX Libido Lift sachets directly into the cookie dough flour mix and double the water you’re adding to the dough
Libido Lift Curd Ingredients:
- 5 Sachets of HANX Libido Lift
- 37g Granulated sugar
- 1.5g Vanilla extract
- 93g Vegan condensed milk alternative
- 37g Vegan butter
- 60g Vegan marshmallows
- 1g Natural peach flavouring
- 13g Peach puree
- 25g Water
- 5g Corn flour
Cookie Dough Base Ingredients:
- 50g (Melted) Coconut Oil
- 64g Solid (Room Temp) Vegetable fat
- 10g Corn Flour
- 14g Water
- 121g Icing Sugar
- 250g All-purpose flour
- 2.5g Baking Soda
- 3g Cream of tartar
- 2.5g Vanilla extract
- 1g Natural peach flavouring
- 60g Peach puree
- 1g Ground cinnamon
- .5g Ground nutmeg
- 15g Maca root powder
- 15g Freeze-dried peaches (Crushed into small pieces)
Cobbler crumble topping ingredients:
- 28g (Cold/Solid) Vegan butter
- 62g All-purpose flour
- .25g Sea salt
- .3g Ground cinnamon
- 15g Brown sugar
- 16g Granulated sugar
Method for preparing your curd filling: (If not adding the curd, skip this section)
- Measure out all of your ingredients beforehand as this is a very quick process.
- In a small bowl, dissolve your HANX Libido Lift sachets along with your corn flour and water to create a slurry and set aside.
- In a pan, on medium heat, melt the butter, sugars, condensed milk, and marshmallows until they are combined and smooth.
- Quickly add the peach puree, vanilla, and peach flavourings along with your slurry and whisk over the heat until all combined, smooth and thick.
- Fill your moulds with the curd mixture and place in the freezer overnight or until completely hardened. These are now ready to use when prepping your cookies.
Method for preparing your cookie dough base:
Measure out all your ingredients ahead of time to save yourself any hassle.
- In your mixer combine your room-temperature vegetable fat, coconut oil, brown sugar,
- and granulated sugar. Cream together until pale and fluffy.
- In a separate bowl, sift together the flour, baking soda, cream of tartar, maca root
- powder, nutmeg, and cinnamon together. *If skipping the curd, add in the HANX Libido Lift here.
- In a small bowl, mix the corn flour, flavourings, puree, and water to create a slurry.
- Slowly add one-third of the flour mix to the sugar mix until combined.
- Next add in your slurry, peach pieces, and remaining flour mixture until just combined.
- Do not overmix. If it is not coming together well, you can add a tablespoon of water at a time until it does.
- Place dough into the fridge to rest and chill overnight or a minimum of 8 hours.
Method for preparing your crumble topping:
This can all be measured out into the same bowl for ease.
- Add all of your ingredients into the bowl and use your fingers to rub the butter and dry ingredients together until a loose and chunky crumb forms. You want small crumbs and larger pea-size crumbs for the best texture.
- Set aside covered in the fridge until needed.
Jezebel cookie assembly:
- Measure out your desired number of cookies at 45g each.
- Split each into two halves and flatten out into disks.
- Place one frozen curd portion in the centre of one disk and place the other disk on top while pinching the sides together and rolling into a ball, careful to keep the curd in the centre as much as possible. You need to be quick as the curd will quickly defrost.
- Place aside and repeat the process until all the dough is used.
- Place each ball into the crumb mixture and roll to coat all sides evenly.
- If you are not baking all of them, place the extras into a resealable freezer-safe bag or container and freeze them. You can successfully store them for up to 6 months. This allows you to have cookies on tap whenever the mood hits. The cookies are now ready for the oven.
Baking:
- Preheat the oven to 180C fan assisted (350F) for 10 minutes.
- Line your cookie sheet with parchment paper.
- Place prepared cookie dough balls 2” apart on a prepared cookie sheet and bake for 13-14 minutes. Baking time will vary from oven to oven so keep an eye on them once you smell them baking.
- Cookie should be fluffy and just golden on top/edges.
- Remove from the oven and cool for 5 minutes before placing on a cooling rack. These can be cooled on parchment paper (baking paper) if you do not have a rack.
- Once cooled completely, enjoy! Every 2 cookies equates to a single serving of HANX Libido Lift.
Storage:
Cookies will keep in an airtight container for up to 5 days or in the fridge for up to a week and can be frozen for up to a month. However, these are best when consumed the same day.
